So I’ve probably gone and given it away in the title, but did you know that you can roast any kind of squash seed? I know that pumpkin is our seasonal favorite, but they pretty much all taste the same! Whether you have been harvesting the last of the squash from your garden, or enjoying them from the grocery store, you definitely don’t want to miss out on this tasty snack.

There really isn’t any difference in how you process squash seeds vs pumpkin seeds. You start at exactly the same place. Scoop out the goo and set them aside while you work with your squash. When you are done with your squash, it is time to liberate your seeds. Pumpkin is a popular choice because the seeds come out relatively easily, and in a big pumpkin there are a lot of them. In zucchini, like I used, they are more densely packed. It may take a few extra minutes to get them free, but it is worth it!

Once you have your pile of seeds, put them in a strainer and rinse, rinse, rinse. you don’t want them to feel slimy when you are done.

From this point you can make them using your favorite method for roasting pumpkin seeds. Just adjust the length of time that you have them in for if your squash seeds are a little smaller than a pumpkin seed. Personally, I really like the trick of boiling them in salted water before I roast them. I find that it gives a really even salty flavor.

After they have been boiled, I do the typical tossing lightly in oil and spreading them out on a pan to roast. Don’t forget to keep a close eye on them and stir them occasionally until they are done.

That’s it! Easy as pie. (Like the pumpkin joke I tossed in there? Sorry, that was pretty bad, but I couldn’t resist.)
